It’s summer and that means it’s time for summer cocktails. While I love a nice simple gin & tonic, there is something about sitting out on the back porch in the lazy days of summer that makes me want to get a little more creative in my drinks. I mean it’s summer – there is ripe fruit and fresh herbs readily available! Take this Blueberry Mint Frozen Gimlet for example. The blueberries came from bushes in my backyard and the mint came from a mint patch at the side of the house. (Mint has it’s own bed far, far away from all the other beds, since it runs rampant if given half a chance.)
With all the ingredients readily at hand, it was a snap to whip this up. The recipe calls for using a Magic Bullet. I didn’t have one and just used my regular blender. With my regular blender, I didn’t really end up with a frozen drink (perhaps I needed to add more ice, or puree less), but it was still quite tasty and refreshing. Perfect for a sumer afternoon.
Blueberry Mint Frozen Gimlet (online Here)
- 1/2 cup fresh blueberries
- 6 mint leaves
- 1 1/2 ounces dry London-style gin
- 3/4 ounce simple syrup
- 1 ounce fresh lime juice
- ice to fill cup
Load ingredients into the 8 ounce cup in the order listed (it’s important to fill the cup up). Blend. Garnish with fresh mint sprigs.
Serves 1
