Lavender Bee’s Knees
Before I started this blog, I would occasionally publish liqueur and cocktail recipes on Sidewalk Shoes. Lavender infused gin was one of my most pinned posts! After making it once, I now always have a bottle on hand in my liqueur cabinet. So, I was thrilled when I saw it used in one of my favorite cocktail books, Wild Cocktails from the Midnight Apothecary: 100 Recipes Using Home-grown and Foraged Fruits, Herbs, and Edible Flowers.

The Bee’s Knees is a Prohibition-era cocktail of gin, honey and lemon juice. It was developed to mask the flavors of the bathtub gin that was prevalent then. You don’t need to mask anything with this cocktail, the floral gin is fabulous and pairs beautifully with the lemon juice. Remember the honey simple syrup from last week? Well, it goes in this cocktail and adds another floral yet earthy layer.
Once you make your lavender infused gin and your honey simple syrup, this cocktail is so easy!
