Fresh mint, crisp cucumber and tart lime turn this rum cocktail in to a perfectly refreshing drink!
You know how every week I say something like, “Oh my gosh, this was the best cocktail ever!?” Well, I’m saying it again. Seriously. This was amazing. It was so perfectly flavored. The cucumber gave it an earthy summer vibe, the lime added just the right amount of citrus and the mint gave a nice cool bite.
As we were drinking this, I was discussing with Mr. Grey about how I could have this cocktail more often. I’m even thinking that it may replace my much loved gin and tonic. Well, not replace, but certainly stand in now and then. The first thing I’m going to do is infuse some rum. My theory is that if I make a cucumber, lime and mint infused rum, then all I have to do is add some club soda and I am good to go. We’ll see. It’s an experiment worth trying, right?
I’m going to keep this post short and sweet, since I have to get busy infusing some rum! I found this cocktail at Sweet Paul, of course! You can find the recipe online here: Mint, Cucumber, and Lime Crush. I modified it a bit, using less simple syrup and I used a honey simple syrup.
Ingredients
- 3 tablespoons lime juice
- 2 ounces of simple syrup
- 3 ounces of rum
- 1 lime thinly sliced
- 6 thin slices of cucumber
- 4 fresh mint leaves
- 2 mint sprigs for garnish
- ice
- club soda
Instructions
- In a cocktail shaker or glass jar mix together the lime juice, simple syrup, rum, lime slices, cucumber slices, and mint. Stir to combine.
- Fill two cocktail glasses with ice and even pour the cocktail into each. Top with club soda. Garnish with fresh mint sprig.
