I am the first to admit that I am not a bit spontaneous (well, except when it comes to buying shoes). I like to know where I’m going, when I’m going, what I’m eating and what I’m drinking. Nothing is left to chance. However, I may need to rethink that, if it means I’m missing gems like The Solvang Restaurant in Solvang, California. I already knew where we were going to eat lunch in Solvang after some wine tasting.
As we doing a little sight seeing, we noticed a small line of people at the window of the Solvang Restaurant. It seems you could eat inside or you could just order at the window and sit at one of the benches along the quaint sidewalk. I spotted people holding small baskets of what looked like big fluffy donuts with something sweetly red on top. Turns out these are aebleskivers. Aebleskivers are actually ebleskivers – or Danish apple pancakes, though I believe that these do not contain apples.
We ordered one to go to share. You get three nice sized puffed pancakes and they are drizzled with raspberry jam and sprinkled with powdered sugar. So good! It was the perfect size to share, though I admit I could have easily ate them all myself. Totally worth it to get into the whole Danish vibe of Solvang.

I’d love to try that restaurant sometimes. My mother’s side of the family is Danish and I’ve been making and eating aebloeskivers all my life.
