We planted three blueberry bushes and one blackberry bush in our backyard. Best decision we’ve ever made! We also somehow have another huge voluntary blackberry bush pop up and even thought the blackberries are smaller, they are still yummy. So faced with a surplus of blackberries, I did what I almost always do, looked for a way to drink them!
My daughter and her boyfriend were going to be stopping by for awhile on a Saturday afternoon. I thought a pitcher of cocktails might be just the thing! And, it was!! This was so refreshing! Sweet but not overly so, minty and citrusy. Absolutely perfect for sitting out on the back porch and sipping an afternoon away!
Blackberry Cocktail | Tipsy Tuesday
Blackberries and gin make a delightful refreshing summer cocktail.
- .75 ounce fresh mint
- 1 cucumber sliced thin
- 12 ounce blackberries
- 3/4 cup fresh lime juice about 3 limes
- 8 teaspoon turbinado sugar
- 1 cup gin
- 1 cup club soda
- Garnishes: cucumber slices fresh blackberries, lime wedges, lemon mint sprigs
Place first 5 ingredients in a large pitcher. Gently press mint leaves, cucumbers, and blackberries against side of pitcher with a wooden spoon to release flavors. Stir in gin and club soda. Serve over ice.
Garnish, if desired.
