Blackberry Fence Hopper a Vodka Cocktail

Last week I posed Blackberry-Thyme Infused Vodka, this week I am back again with more blackberries.  You have to make hay while the sun shines, right?  Or in this case, make blackberry cocktails while blackberries are in season.  I love using fruit in my cocktails, it makes me feel like I am drinking healthy.  Or sure I could use it in some smoothies and be even healthier.  But I figure if I’m going to be drinking a cocktail might as well add a few antioxidants in there too!

Blackberry Fence Hopper - a summery fruity vodka cocktail

I found this fruity vodka cocktail in one of my favorite cocktail books, Shake.  This is such an easy cocktail and just look at that gorgeous color!  All you need is vodka (and yes, I could have used my blackberry thyme infused vodka to add even more flavor), lemon juice, honey, blackberries, lemon and seltzer.  In place of seltzer we always just use Soda Streamed water – so easy.

I imagine this would be just as yummy with raspberries!

Blackberry Fence Hopper a Vodka Cocktail

This Blackberry Fence Hopper is a vodka cocktail you're going to love all summer long! 

Course Drinks
Servings 2
Calories 227 kcal

Ingredients

  • 4 ounces vodka
  • 2 ounces lemon juice fresh
  • 2 ounces wildflower honey
  • 8 fresh blackberries plus 4 for garnish
  • 2 slices lemon for garnish
  • seltzer

Instructions

  1. Add the lemon juice, honey and blackberries into a cocktail shaker and muddle until thoroughly crushed.
  2. Add the vodka and ice to the shaker and shake for 10 seconds.
  3. Strain into tumblers filled with large ice cubes, top with the seltzer and garish the fresh blackberries and lemon slices.
