Muddling blackberries and mint releases their summer flavors and mingle perfectly with ginger beer for this easy summer cocktail recipe.

When Mr. Grey brought home a container of blackberries from the farmer’s market, I didn’t even think about what I might use them for. It was obviously going to be a cocktail. After having made a slew of berry cocktails: Norwegian Wood, Strawberry Lemony Heaven, Strawberry Mint Mojito, Blackberry Cocktail, and Blueberry Mint Frozen Gimlet – I knew that berry cocktails were some of my favorites.
I wanted to pair the blackberries with some mint (if for no other reason than my mint is flourishing), add some gin and then come up with a topper. There are different toppers for cocktails – tonic water, club soda, ginger ale, and one of my favorites ginger beer. I always keep a few bottle of Saranac Ginger Beer on hand – this isn’t sponsored in any way – just happens to be my favorite brand.
This cocktail is so easy. You basically muddle the blackberries and fresh mint with some lime juice, simple syrup, and vodka. Strain into an ice filled cocktail glass and top with ginger beer. Garnish with a mint sprig and a few blackberries and you have an easy, delicious and refreshing summer cocktail.

Blackberries, Mint, Ginger Beer and Vodka make for a refreshing summer cocktail!
- 2 blackberries plus more for garnish
- 2 sprigs of mint plus more for garnish
- 1 oz lime juice
- 1/2 oz simple syrup
- 2 ounces vodka
- 4 ounces Ginger beer
Fill a cocktail glass with ice.
In a cocktail shaker add the blackberries, mint sprigs, lime juice, simple syrup and vodka. Muddle the berries and mint leaves to release the flavor. Strain as you pour into the cocktail glass.
Top with ginger ale, stir and garnish with blackberries and a mint sprig.
