Kiwi Envy is a light and refreshing gin cocktail!
When my local grocery store had some organic kiwi on sale, I grabbed a bag. I was planning on freezing slices for smoothies, but then decided to do a search on kiwi cocktails. I found Kiwi Envy at Aviation Gin. Since I’ve already discussed the state of my liquor cabinets (as in, I have too much liquor!!), it should come as no surprise to anyone that I had everything I needed to make this cocktail.
What a lovely cocktail this was! Really simple and I think I’ll use the technique with other fruits. You simply muddle the kiwi, add liquors and simple syrup, shake, strain and serve. To add even a little more interest to it, instead of plain simple syrup, I used our homemade Ginger Simple Syrup.
Not only does it use gin (my favorite), it also uses elderflower liqueur – my second favorite!! Of course, it probably will be even better in the summer. As it was, we sat huddled up on the love seat, dreaming of warmer days ahead!
