Ginger beer, coconut water and rum make a light and refreshing cocktail in this The Rum Hipster!

It’s that time of the year around here. The time of year where you just can’t seem to be outside enough. It’s absolutely gorgeous from morning to night. The temperature is perfect, the bees are busy, and the mosquitos haven’t quite become a deluge yet. For Weekend Wine Reviews at Sidewalk Shoes, we have created the lovely habit of enjoying a bottle of wine late on Sunday afternoon. It’s my job after all. Now, with the added job of making and drinking a cocktail once a week, we’ve added another lovely habit.
Our new habit? A Saturday afternoon cocktail enjoyed from our screened in back porch. With this missive in mind, I am on the search for spring/summer cocktails. Cocktails that are refreshing. Cocktails that have plenty of mixer, so you can drink a couple and not feel the need to curl up and go to sleep. My favorite cocktails are those that use a soda for mixer, Dry Vanilla Bean Elderflower Cooler and Gin Cucumber Cooler to name a couple. Another favorite mixer is ginger beer – I loved this Moscow Mule. I still had some ginger beer on hand, so I started my search with that ginger beer in mind.
I started with my favorite chef, Donna Hay and didn’t have to look far before I discovered The Rum Hipster. It sounded so good. Ginger beer, coconut water and rum! It also called for lemongrass, which I had some frozen, but unfortunately forgot to take out in time, so I omitted it and it was still wonderful. I know that lemongrass is an ingredient that some people might have difficulty finding, so I’ve left it out of the recipe. In her recipe all you do with it is add it at the end with the lime slice, so while it would impart some lemongrass flavor, I liked it mighty fine without it.
Her recipe served 6-8 and I’ve modified it to serve two. It was much easier for me to modify it leaving it in milliliters so I did. Trying to divide 1/4 cup of something by 3 is not my cup of tea. Oh, I know there is the whole invert and multiply thing, but really metric is soooo much easier when it comes to this.

The Rum Hipster | Tipsy Tuesday
Ingredients
- 60 ml rum
- 250 ml chilled ginger beer
- 250 ml chilled coconut water
- 20 ml lime juice
- 1 lime thinly sliced
Instructions
- Filled a collins glass with ice.
- Stir together rum, ginger beer, and coconut water. Pour over ice in glass and garnish with a lime slice.
Sounds great! I love ginger ale/beer…and rum, of course!
I do love ginger beer, so this cocktail I’m sure would be a winner at my house
