So, people who also read my other blog, Sidewalk Shoes, know that last year for Mother’s Day, I bought myself a Vitamix. Since then I’ve enjoyed all kinds of smoothies. I don’t know why I didn’t think of frozen cocktails! Anyone?! Why in the name of all things wonderful had I not considered frozen cocktails. Now, it’s all I can think of!
The story for this Best Frozen Strawberry Daiquiri starts back on Saturday evening. My middle daughter is planning her wedding and the stress is starting to get to her. She texted me that she needed a drink and what did I suggest. Apparently she was at the liquor store with her boyfriend. The thing is, she doesn’t drink. Oh, she’ll have a sip now and then, but really nothing much. So, I suggested some premade fruit type drinks, they would be low in alcohol. She didn’t want all the sugar and besides she was reading this blog and wanted to MAKE something. Something fruity. Out of the blue, I suggested a frozen strawberry daiquiri. Perfect! Even though I hadn’t had one in years, it was the perfect cocktail for her. She could make it as weak as she’d like.
Fast forward to the next day, Sunday, when I realized that I still hadn’t made my cocktail for today’s Tipsy Tuesday! I opened up the fridge and saw the fresh organic strawberries that I had in the fridge. Bingo. Then I turned around and saw my Vitamix on the counter. Double Bingo! I pulled out the Vitamix recipe book that comes with it and turned to the cocktails section. Oh my friends, I have been lacking. Mango daiquiri’s, banana daiquiris, and even a frozen whiskey sour. I had everything I needed to make the frozen strawberry daiquiri.
I am not kidding when I say that this was The Best Frozen Strawberry Daiquiri. It was filled with fresh strawberry flavor, not too sweet, a nice touch of citrus and so incredibly smooth. No, this is not a sponsored post for Vitamix, but oh my gosh, this had the perfect consistency. No chunks of ice, perfectly smooth. Note – the recipe at their website is different than the one I used in the book. Also, the one in the book called for sweetened lime juice – I just used regular lime juice. Make this. Now.
- 2 ounces rum
- 1 ounce Grand Marnier or Triple Sec
- 2 tablespoons lime juice
- 2 tablespoons sugar
- 4-6 large fresh strawberries, hulled
- 1 cup frozen strawberries
- 1 1/2 cups ice cubes
- Place all ingredients in blender and process until desired consistency.
