Earthy rosemary makes a fine Rosemary Simple Syrup – perfect to jazz up your cocktails.
I know it’s not fall yet. I don’t know if it’s the children going back to school or what, but I am already gearing up for fall. Starting to feel the pull of apples and winter squash. Yesterday I spent way too much time pinning boots on Pinterest. Then there is next week’s cocktail – an apple whisky cocktail that is perfect year round, but feels like fall. Apples. Whisky. They go perfect together and what makes them even better together is this rosemary simple syrup.
Did you see my post on the Thyme Simple Syrup? Well, now you can add rosemary simple syrup to your list. I might even like this one better than the thyme, I think it’s because rosemary is a little more assertive. What I also like about this rosemary simple syrup is that it uses sugar and honey! Really rich and earthy. Perfect for easing into fall. I found this recipe in Donna Hay’s Magazine Aug-Sep 2015.
- 1/2 cup superfine sugar
- 1/2 cup water
- 1/2 cup honey
- 6 sprigs rosemary
- Place the sugar and water in a small saucepan and bring to a boil and cook for about 3 minutes. Remove from the heat and add the honey, stirring to incorporate. Then add the rosemary. Let the syrup cool to room temperature before removing the rosemary.
- Store in a lidded bottle in the refrigerator.
